Baked Ziti in Cast iron skillet =============================== - 1.5 lb grape tomatos - 1 tbsp olive oil - 6 garlic cloves minced - 1/4 red pepper flakes (Too spicy for girls, add at end for Jeff) - 1 tsp tomato paste (didn't work, use about 1 cup marinara sauce instead) - 3 3/4 cup ziti (uncooked) - 3 cups water - 1 oz (1/2 cup) grated parm chz (freshly grated) - 1/4 cup fresh basil - 1 cup mozzerella cheese Instructions: 1) Adjust oven rack to 6 inches below broiler. Heat 12" cast iron skillet over med heat (5 min) 2) Toss tomato with oil + 1 tsp salt. Cook in skillet, stirring occassionally, until lightly charred and blistered (about 10 min) 3) Stir in garlic, tomato paste, pepper flakes until fragrant (about 30 seconds) 4) Turn off heat, mash tomato with potato masher 5) Stir in water + pasta, bring to boil over medium heat. Reduce to simmer, cover and cook 15-18 min until pasta is tender.
